Easy Eggplant Fatteh in a Tried-and-Easy Recipe
Ingredients
- 2 large eggplants
- 2 cups yogurt
- 2 garlic cloves, minced
- Salt, to taste
- Pine nuts
- 2 cups ground meat
- Chopped parsley
- 1 tablespoon flour
- 1 Arabic bread loaf
Method
- Peel the eggplants and cut them into cubes. Salt them, then place them in a colander for 15 minutes..Timers: 15 min
- Dry the eggplant well with a clean towel and press it to remove as much water as possible so it does not absorb too much oil while frying….Coat the eggplant pieces with flour to make them tastier and crispier when fried.
- Fry the eggplant in plenty of hot oil and set aside…
- Toast the bread in a baking tray in the oven or fry it as desired. Also toast the pine nuts and set aside.
- Mix the yogurt with the garlic and salt and set aside…
- Spread the bread in a baking tray or glass dish and pour the yogurt mixture over it, then distribute the eggplant and ground meat over the yogurt. Garnish as desired with parsley and fried pine nuts….
- Serve the eggplant fatteh immediately after preparing it.
