Ingredients

  • Dough :
  • 3 cups all-purpose flour
  • 1/2 cup whole wheat flour (optional)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 tablespoons powdered milk
  • 1 teaspoon active dry yeast dissolved in warm water with a pinch of sugar
  • 1/4 cup oil
  • Water as needed
  • Sauce :
  • 1 small dry onion
  • Vegetable oil
  • Tomatoes
  • Salt
  • Oregano or dried thyme
  • Pizza seasoning
  • 2 tablespoons ketchup

Method

  1. Place the yeast, sugar and warm water in a small bowl and wait about 5 minutes until the mixture foams from the yeast activity.
    Timers: 5 min
  2. Add the yeast mixture to the other dry ingredients (except the water) and mix.
  3. Add the water gradually and knead — the amount of water depends on the flour.
  4. When you have a soft, cohesive, non-sticky dough stop adding water and knead for 10 minutes.

  5. Cover the dough and let it rest and rise in a warm place for at least one hour before using.
  6. Sauté the finely chopped onion in a little oil until soft.
  7. Add the tomatoes after blending them in a food processor or blender.
  8. Simmer over medium heat until most of the liquid evaporates and the sauce thickens.
  9. When the consistency is right (not too watery) add salt, oregano, pizza seasoning and ketchup, stir and remove from heat.
