Homemade Qatayef Batter

Homemade qatayef batter with a wonderful recipe we never change. It turns out great every time and works with different fillings. You can use it for raw qatayef with asafiri filling, or stuff it and fry it. Try it and let us know what you think.

Ingredients

Start here, then move straight into the method.

  • 2 cups flour
  • 1 cup fine semolina
  • 2 and 1/2 cups lukewarm water
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon yeast
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • A splash of rose water

Method

Follow the cooking sequence without leaving the page.

  1. Blend all the qatayef batter ingredients in a blender for several minutes until the mixture is smooth and well combined.
  2. Set the batter aside for 1 hour to rest.
    Timers: 60 min
  3. After 1 hour, start cooking the qatayef.
  4. Use a nonstick pan. Heat it slightly, then begin pouring the batter into round circles of the desired size.
  5. Wait until all the bubbles have come to the surface before lifting the discs from the pan.
  6. Continue cooking the rest in the same way until all the batter is used up.
  7. Cover the batter with a clean cloth so it stays soft until filling and serving.
  8. Note: If you use this batter for fried qatayef, you will get crispy qatayef.
