Home-style vegetable manzala — very tasty
Ingredients
- 500 g meat, cut into very small pieces
- 2 large eggplants, cut into cubes
- 1 zucchini, cut into cubes
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 medium potato, chopped
- 1 ripe tomato, chopped or grated
- 1 large onion, sliced
- 1 clove garlic, finely chopped
- 2 tablespoons tomato paste mixed with 1/2 cup water
- 2 bay leaves
- 1/2 teaspoon ground ginger or 1/2 teaspoon freshly grated ginger
- Pinch of black pepper
- 1 teaspoon hot pepper (chili), or to taste
- Oil
- Salt to taste
- Kibbeh Hilla (grilled)

Method
- Heat a little oil in a pot over medium-high heat. Add the meat with a little salt and stir until the meat is cooked.
- Add the onion and garlic and sauté briefly until they soften.
- Add the remaining ingredients and stir well; adjust the salt if needed.
- After a short while, add the tomato paste mixed with the water, then cover the pot and leave it over high heat until the liquid comes to a boil
- Sprinkle the spices and toss gently so the vegetables keep their shape. Reduce the heat and leave the vegetable manzala with meat to simmer until everything is tender.
