  • 2 eggs, at room temperature
  • 2 tablespoons cornstarch
  • 1 cup sugar
  • 2 tablespoons vegetable oil
  • 3 teaspoons baking powder
  • a pinch of vanilla
  • zest of lemon
  • 1 tablespoon white vinegar
  • 3 tablespoons Lotus Biscoff spread, plus extra for decoration
  • 1 cup yogurt

Method

  1. Preheat the oven to 180°C.
  2. Sift the flour and dry ingredients 3 times.
  3. Then beat the eggs, sugar, Lotus spread, and yogurt for 5 minutes.

  4. Add the dry ingredients and continue beating for 2 minutes only.

  5. Grease a cake pan with a little butter, then dust it with flour and pour in the Lotus cake batter.
  6. Bake in the preheated oven, reducing the temperature to 170°C, for about 40 minutes or until the cake is cooked through and risen.

  7. Melt the reserved Lotus spread in the microwave for 1 minute. Once the cake is done, place it on a rack to cool completely.

  8. Spread Lotus spread over the cake and decorate with a little Lotus biscuit, if desired.
