How to Make Zucchini with Yogurt

Yogurt dishes are especially popular in summer, and cooks prepare zucchini with yogurt in many different ways. Here is a delicious, tried-and-tested new recipe: zucchini stuffed with rice and meat in yogurt. Enjoy!

Ingredients

  • 10 zucchini
  • 1/2 kilo minced meat
  • 1/2 cup Egyptian rice
  • 4 cloves garlic
  • mixed spices
  • black pepper
  • salt
  • 3 tablespoons vegetable oil
  • dried mint
  • 2 cups yogurt
  • 1 cup water
  • 2 tablespoons cornstarch
  • pine nuts, toasted

Method

Follow the cooking sequence without leaving the page.

  1. Hollow out the zucchini, then place it in salted water.
  2. Cook the minced meat in a pan with a little oil until done. Remove from the heat, then add the crushed garlic, pine nuts, and washed, drained rice. Mix well to combine into a uniform filling.
  3. Drain the zucchini well and stuff them, filling them only to three-quarters full so they do not burst when the rice cooks.
  4. In a bowl, mix the yogurt with the cornstarch, water, salt, and a pinch of black pepper. Place the yogurt mixture over the heat until it comes to a boil, then add the stuffed zucchini and stir gently.
  5. Add the dried mint and crushed garlic, stir, and let the zucchini cook until tender...
  6. Remove from the heat and serve on a platter, garnished with toasted pine nuts. Enjoy!
