Ingredients
Start here, then move straight into the method.
- 10 zucchini
- 1/2 kilo minced meat
- 1/2 cup Egyptian rice
- 4 cloves garlic
- mixed spices
- black pepper
- salt
- 3 tablespoons vegetable oil
- dried mint
- 2 cups yogurt
- 1 cup water
- 2 tablespoons cornstarch
- pine nuts, toasted
Method
Follow the cooking sequence without leaving the page.
- Hollow out the zucchini, then place it in salted water.
- Cook the minced meat in a pan with a little oil until done. Remove from the heat, then add the crushed garlic, pine nuts, and washed, drained rice. Mix well to combine into a uniform filling.
- Drain the zucchini well and stuff them, filling them only to three-quarters full so they do not burst when the rice cooks.
- In a bowl, mix the yogurt with the cornstarch, water, salt, and a pinch of black pepper. Place the yogurt mixture over the heat until it comes to a boil, then add the stuffed zucchini and stir gently.
- Add the dried mint and crushed garlic, stir, and let the zucchini cook until tender...
- Remove from the heat and serve on a platter, garnished with toasted pine nuts. Enjoy!
