How to Make Beef Kebab
Beef kebab is a quick recipe from the Arab kitchen — very tasty when grilled and best served with tarator (tahini) sauce and piyaz (onion salad). It’s also delicious with white rice.

Ingredients
Start here, then move straight into the method.
- 500 g minced veal (finely ground) with a little fat
- 1/2 cup red bell pepper, chopped
- 1/2 cup onion, chopped
- 1/2 cup parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon cinnamon
- 1 teaspoon black pepper
- A little hot pepper, to taste
- A pinch of salt
- Accompanying salad
- Onion
- Red bell pepper
- Parsley
- Sumac
- Tarator (tahini) sauce
- 1/4 cup tahini
- 1/4 cup cold water
- Juice of 1/4 lemon
- A pinch of paprika - optional

Method
Follow the cooking sequence without leaving the page.
- In a food processor, finely chop the onion, bell pepper, parsley and cilantro. Add this mixture to the minced meat along with all the spices, then mix the ingredients well by hand.
- Shape the kebab patties as you like — for example, start with a round patty and, with wet hands, press it into a triangle shape.
- Brush the charcoal grill with a little vegetable oil and grill the kebabs, turning to brown both sides until cooked through. You can also use an indoor grill or griddle.
- Prepare the accompanying salad by cutting the onion and red pepper into thin lengthwise slices...
- Add the chopped parsley, sumac and salt, and mix well.
- Prepare the tarator by mixing the tahini with the water, lemon juice and salt using a fork until you have a smooth mixture.
- Serve the beef kebab in bread (cut into triangles like the kebab) with the salad and tarator.
