How to Make Turkish Pastry

How to make Turkish pastry in an easy, practical recipe the whole family will adore!

Ingredients

Start here, then move straight into the method.

  • 4 cups flour
  • 1 cup warm water
  • 1 tsp instant yeast
  • 1 egg
  • 1 tsp salt
  • 2 tbsp sugar
  • 3 tbsp vegetable oil
  • 2 tbsp yogurt
  • Filling
  • Mozzarella cheese
  • 2 eggs
  • Brushing
  • 1 tbsp liquid milk
  • Sesame seeds
  • Nigella seeds (black cumin)

Method

Follow the cooking sequence without leaving the page.

  1. In a bowl combine the flour and salt and mix, then make a well in the center and add the yeast, sugar, and half of the warm water.
  2. Stir the ingredients slightly, then cover and leave for 5 minutes to activate the yeast.
    Timers: 5 min
  3. In a small separate bowl combine the remaining water with the egg, yogurt, and oil and mix well until smooth.
  4. Add the water-and-egg mixture to the flour and begin kneading until you obtain a single soft dough.
  5. Place the dough in a bowl greased with oil, brush the surface of the dough, cover, and let it rise for 1 hour.
    Timers: 60 min
  6. Put the risen dough on a clean surface dusted with flour, then divide it into medium-sized balls.
  7. Roll each dough ball with a rolling pin into an oval shape, then place a sufficient amount of cheese filling, leaving space for the egg, and seal the ends.
  8. Place an egg at the front and another at the back of the pastry.
  9. Carefully brush the pastry with the egg beaten with milk, sprinkle some sesame and nigella seeds, and bake in a preheated oven at 200°C (392°F) for about 15 minutes.
    Timers: 15 min
  10. You can also finish under the grill/broiler to brown the top until golden.
  11. Note: You can use any filling such as sfiha (minced meat topping) or spinach and cheese.
