Ingredients

  • For the dough:
  • 2 cups flour
  • 1/2 teaspoon salt
  • 3/4 cup lukewarm water, or as needed
  • For the filling:
  • 250 g minced meat
  • 1 large onion
  • 2 tablespoons oil
  • 1 tablespoon seven-spice
  • Salt to taste
  • For cooking:
  • 1 kg cow's yogurt
  • 2 tablespoons cornstarch
  • 2 cups water
  • 1/4 bunch fresh cilantro, washed and chopped
  • 1 tablespoon ghee

Method

  1. Mix the dough ingredients and then knead well....
  2. Wrap the dough in a plastic bag and let it rest aside for about 15 minutes
    Timers: 15 min
  3. Prepare a large pan, then sauté the onion in the vegetable oil until softened
  4. Then add the minced meat and stir the mixture over high heat until the meat changes color
  5. Add the spices and salt, then wait until the meat is cooked to form the shish barak filling
  6. Roll out the dough with a rolling pin until thin, then use a small cutter to cut it into circles
  7. Take each circle and place a suitable amount of filling inside, then seal it so it takes the shape of a half-moon or a sambousek
  8. Then take one edge of the shish barak and press it onto the other edge so they stick together and the dumplings take their final hat-like shape
  9. Place the shish barak dumplings on a tray lined with a plastic bag and arrange them (using the bag reduces the amount of flour needed when cooking them in the yogurt)
  10. In a pot over the heat put the yogurt then add the cornstarch and whisk well so they combine
  11. Stir the yogurt, adding water from time to time as needed until it boils and bubbles appear, then add the shish barak dumplings
  12. Cook the yogurt over medium-low heat for about 30 minutes or until the shish barak dumplings are cooked

  13. Fry the garlic, cilantro, and ghee, then add them over the shish barak
  14. Serve the shish barak with rice cooked with vermicelli or mujadara (lentil and rice dish)
  15. Note: When placing the shish barak dumplings on a tray you can freeze them until solid and then place them in a freezer bag
