How to Make Chicken Shawarma

- Half a kilo of chicken breast strips, cut into thin slices
- Marinade
- 1 tablespoon ketchup
- 2 tablespoons yogurt
- 1 tablespoon shawarma spice mix
- 1/4 tablespoon cardamom
- 2 cloves garlic, crushed
- 1 teaspoon cinnamon
- 1 teaspoon salt, or to taste
- 1 teaspoon fresh grated ginger... or 1/4 teaspoon ground ginger
- Sauce
- 2 tablespoons mayonnaise
- 1 tablespoon yogurt
- 1 tablespoon tahini
- 1 clove garlic, crushed
- 2 tablespoons lemon juice
Method
Follow the cooking sequence without leaving the page.
- Soak the chicken strips in the marinade overnight.
- The next day, add a little oil to a skillet and sauté the shawarma until cooked through. You can also add 1 teaspoon of tail fat, ghee, or cooking fat to the pan with the oil before adding the shawarma, because chicken breast is dry; this is up to your preference.
- Whisk the sauce ingredients well in a bowl and use it when assembling the sandwiches. Spread 1 tablespoon of the sauce on a round of Arabic bread, add some shawarma along with French fries and pickled cucumbers, if desired, then roll the sandwich and toast it on a sandwich press or grill.
