Chicken Cordon Bleu — a very popular chicken recipe across the Arab world; it's truly distinctive and special.

Ingredients

  • 500 g boneless chicken breasts
  • 1 tsp curry powder
  • Salt
  • Black pepper
  • 1/2 tsp cinnamon
  • 1 tsp paprika
  • White pepper
  • Slices of smoked turkey
  • Cheese slices (Kashkaval or mozzarella, or both, to taste)
  • 1 egg
  • Fine breadcrumbs
  • All-purpose flour
  • Baking powder
  • Sauce:
  • 1 clove garlic, crushed
  • 1/2 cup sliced mushrooms
  • 1 tbsp butter
  • 1 cup cream
  • 1/2 cup shredded cheddar
  • 1 tbsp flour
  • A pinch of saffron

Method

  1. Wash the chicken pieces well and cut them into wide slices suitable for rolling.
  2. Season them well with the spices.
  3. Between two layers of plastic wrap, pound the chicken slices with a kitchen mallet—be careful not to tear them—this flattens and thins them.
  4. Remove the top plastic and place a slice of turkey and a slice of cheese on each chicken slice.
  5. Roll the chicken slice around the turkey and cheese.
  6. Place the Chicken Cordon Bleu pieces in a plate with a little flour and coat them on all sides.
  7. Transfer them to another plate with beaten egg and dip them.
  8. Finally dip them in a third plate containing fine breadcrumbs.
  9. Place the Cordon Bleu pieces in the refrigerator or freezer for about two hours.
  10. After two hours, fry them in plenty of oil or you can bake the pieces in the oven.
  11. Serve them hot with a special sauce.
  12. Put the butter, crushed garlic, and chopped mushrooms in a pan over the heat and sauté until they soften.
  13. Add the flour and stir, then add the cream gradually while stirring quickly so the flour does not clump.
  14. When the mixture boils, add the cheese and saffron and stir until the cheese melts, then remove the sauce from the heat.
