Cilantro Chicken Recipe
Cilantro chicken... one of the tastiest oven-baked chicken marinades, with a pronounced cilantro flavor. It doesn’t require more than one spice—the white pepper—and the result is wonderful, with a cooking method that helps keep it juicy.

Ingredients
Start here, then move straight into the method.
- 1½ kg chicken thighs, cut and skin removed, or cut young chicken pieces
- A bunch of fresh cilantro
- Half head of garlic, crushed
- 1/2 teaspoon white pepper
- Juice of 1 large lemon
- 1 teaspoon dried ground coriander
- 1/4 cup vegetable oil
- Salt
Method
Follow the cooking sequence without leaving the page.
- Wash the chicken well and let it drain
- Mix the marinade ingredients — garlic, lemon, oil, salt, cilantro, white pepper and dried coriander — and soak the thighs
- Leave the chicken marinating in the fridge for at least two hours
- Place the chicken thighs in a tray and cover with aluminum foil
- Put them in the oven at 200°C for half an hour
- After the time elapses, remove the aluminum foil and return the tray to the oven for another half hour until some of the sauce evaporates and the chicken is well cooked
- Brown the top of the chicken well, basting it with its sauce from time to time to keep it tender
- Serve the cilantro chicken with garlic, potatoes and salad
