Ma'karoun Fried Sweets (Ma'karoun)
Ma'karoun — an old-fashioned, popular fried sweet soaked in syrup. Rich and indulgent, it’s a longtime favorite. Here’s how to make it.

Ingredients
Start here, then move straight into the method.
- 2 cups all-purpose flour
- 1 cup fine semolina (also called "farikha" flour)
- 1/2 cup sugar
- 1/2 cup powdered milk
- 1 teaspoon powdered mahaleb (mahlab)
- 1 teaspoon ground anise
- Pinch of salt
- 1/2 cup oil
- 1/2 cup anise-infused water
- Additional water as needed
- Syrup (Qater)
- 2 cups sugar
- 1 cup water
- 1/2 teaspoon orange blossom water
- 1/2 teaspoon rose water
- 1 teaspoon lemon juice

Method
Follow the cooking sequence without leaving the page.
- Mix all the Ma'karoun ingredients together, then add water gradually and knead until you have a cohesive dough
- Form the dough into small balls, then roll each ball between your palms slightly elongated to make finger-shaped pieces
- Press each 'finger' onto the surface of a cheese grater or a sieve to imprint the dough with a pattern—see photo
- Prepare the syrup: put the sugar and water in a small pot over medium heat and stir until the sugar dissolves
- When the mixture boils, add the lemon juice and leave the syrup on low heat for 10 minutesTimers: 10 min
- Add rose water and orange blossom water, stir, then remove the syrup from the heat
- Let the syrup cool
- Fry Ma'karoun in hot deep oil for a few minutes, then remove and drain in a sieve for two minutes only, then drop them into the syrup while still hot
- Remove them from the syrup and leave them in a sieve for a while
- Place them on a serving plate and serve
