Brazilian Sonho (Cream-Filled Doughnuts)

Sonho — a Brazilian sweet made from fried dough filled with cooked, cooled pastry cream. Dust with powdered sugar to serve. A very delicious treat we recommend trying.

Ingredients

Start here, then move straight into the method.

  • 3 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon yeast
  • A pinch of salt
  • 1 egg yolk
  • 50 g butter
  • 1 cup liquid milk
  • Custard (filling)
  • 1/2 can sweetened condensed milk (Nestle) or more to taste
  • 2 cups liquid milk
  • 4 tablespoons cornstarch
  • 1 teaspoon vanilla

Method

Follow the cooking sequence without leaving the page.

  1. Mix the flour, sugar, yeast and salt, then add the remaining ingredients and knead with lukewarm milk until a soft dough forms.
  2. When the dough becomes soft, let it proof for about 30 minutes in warm weather (longer if needed).

  3. Meanwhile prepare the custard: dissolve the cornstarch in the milk, add the condensed milk, egg yolk and vanilla, mix well and strain.
  4. Cook the mixture in a saucepan over low heat, stirring continuously, until it thickens.
  5. Cover the surface of the custard with plastic wrap and allow it to cool completely.
  6. Roll out the dough thickly, cut into circles, cover and let rest for another 30 minutes (or longer depending on the climate).

  7. Fry the dough in plenty of oil over medium heat (not too hot) so the inside cooks through.
  8. When the doughnuts and the custard are both cold, fill the doughnuts with custard and serve.
  9. You can refrigerate the filled sonho so the custard sets firmer.
  10. Dust with powdered sugar to serve, if desired.
