Ingredients

  • 2 cups sifted flour
  • 3/4 cup fine semolina
  • 1 1/4 cups chickpea flour
  • 1 cup lukewarm water
  • 3/4 cup vegetable oil
  • 1/2 tablespoon yeast
  • 1/2 tablespoon mahlab
  • A pinch of nutmeg
  • A pinch of ground anise

Method

  1. First, mix the liquid ingredients with the yeast, then add the rest of the ingredients.
  2. Knead the mixture well and let the dough rest for at least 10 minutes.

  3. Shape the dough into finger-like pieces by pressing it on a grater or any suitable tool you have available.
  4. Fry the Zainab fingers or maqaroun in hot deep oil. Once they are cooked and browned, remove them from the oil, drain them, and immediately dip them in syrup.
