Ingredients

- 1 kilo flour - about 4 and a half cups
- 2 tablespoons yogurt
- 3 tablespoons powdered milk
- 1 tablespoon yeast dissolved with 2 tablespoons sugar and a cup of lukewarm water
- 1 tablespoon salt
- 1/2 cup oil
- 1 tablespoon baking powder
- Filling
- 2 zucchinis
- 2 eggplants
- 1 sweet red pepper
- 1 sweet green pepper
- 1 large dry onion
- 2 medium tomatoes
- Mushrooms
- 1 cup black or green olives
- 1/2 cup za'atar/oregano
- Salt
- Pizza seasoning
- 1/2 kilo goat cheese
- A jar of pizza sauce
- We can add water as needed until we get a soft, cohesive dough.. cover the dough and let it rest for half an hour.
- . In the meantime, prepare the filling... start by chopping the vegetables.. and mix them with salt, seasoning and za'atar..

Method

- Mix the dry ingredients, then add yogurt, yeast, and oil. Knead by hand or with an electric mixer. Add water as needed until the dough is soft and cohesive. Cover and let rest for 30 minutes.Timers: 30 min
- Meanwhile, prepare the filling: chop the vegetables and mix with salt, pepper, and the thyme/oregano.
- Roll out the dough into a circle, then pierce with a fork and place on a baking sheet.
- Spread pizza sauce on the dough, then distribute the vegetables and olives. Top with goat cheese.
- Bake the vegetable pizza with goat cheese in a hot oven at 180°C until done.
- Note: You can fill the crust edges with extra cheese.
