Method

  1. Wash the eggplant before cutting
  2. Cut it into medium-thick rounds
  3. Place the eggplant slices on kitchen paper and sprinkle salt on both sides
  4. Leave them for a long time, or at least one hour; you will notice droplets of eggplant liquid on them
  5. Use kitchen paper to dry the slices
  6. Fry the eggplant in plenty of hot oil, stirring until it takes the desired brown color and is cooked
  7. Serve the fried eggplant with mint yogurt
  8. Mint yogurt method:
  9. Put the yogurt with fresh mint, a pinch of salt, and a little water in a blender and blend
  10. Add ice cubes, blend again, and serve
  11. You can use strained yogurt without adding water
