How to Make Mini Medlouka or Medlouka Cups

A wonderful recipe and a new, creative way to serve medlouka. You can make mini medlouka with an open top or seal it to look like babka ram, and in either case it looks very elegant for serving guests.

  • 1 cup fine semolina
  • 1 cup sugar syrup
  • 2 medium tablespoons butter or ghee
  • 1 cup water, or as needed for the mixture
  • Ground pistachios
  • Orange blossom water
  • Rose water
  • Green food coloring or dye
  • Ingredients for homemade qashta or cream:
  • 3 liters liquid milk
  • 1/2 cup white vinegar
  • 1 can ready-made qashta cream
  • A splash of rose water
  • A splash of orange blossom water
  • 1 cup liquid milk, 1 tablespoon cornstarch, 1 tablespoon sugar
  • Method for the cream:
  • Bring the milk to a boil, and when it comes up to a boil, add the vinegar so it curdles and you get a mixture like curds. Place it in a strainer to remove the liquid. Add the ready-made qashta to the mixture with the rose water and orange blossom water.

Method

  1. Put the butter or ghee in a wide pan over the heat and add the fine semolina, stirring for a while; then add the syrup and stir, then add the water and pistachios — you can add 1 cup or 1/2 cup pistachios according to taste.
  2. Stir the mixture well until the semolina absorbs the water and you have a soft dough. Add rose water, orange blossom water, and food coloring. Stir well until the dough is uniform. Remove from the heat and set aside to cool, but wrap it tightly with cling film so it does not dry out.
  3. After the dough cools, place a piece of cling film in a small tart mold or baba rum mold and press part of the dough to take the shape of the mold....
  4. You can leave them open as they are and put cream (qimir) inside with fried nuts... or fill them with cream, flip them to take the baba rum shape, and decorate as desired. The method is shown clearly in the accompanying photos...
  5. Ingredients for homemade cream (qimir):
  6. 3 liters liquid milk
  7. 1/2 cup white vinegar
  8. 1 can ready-made clotted cream (qimir)
  9. A splash of rose water
  10. A splash of orange blossom water
  11. 1 cup liquid milk, 1 tablespoon cornstarch, 1 tablespoon sugar
  12. Method to prepare the cream:
  13. Boil the milk, and when it boils add the vinegar so it curdles and you have a mixture like qareesh (curds); place it in a sieve to remove the water. Add the ready-made qimir to the mixture with rose water and orange blossom water.
  14. Separately, boil a mixture similar to muhallabia — 1 cup liquid milk with the cornstarch and sugar; when it thickens, add it over the cream mixture and stir well..
