How to Make Mghammar, or Eggplant Moussaka
Mghammar is one of the tastiest eggplant recipes! As you read through the recipe, you will immediately want to make this distinctive vegetarian dish. It is especially delicious with onions and sweet peppers!

Ingredients
Start here, then move straight into the method.
- 1/2 kilo chickpeas or canned chickpeas
- 5 onions, chopped
- 5 cloves garlic
- Olive oil
- Vegetable oil
- 1 kilo tomatoes
- Salt
- 2 tablespoons tomato paste
- 1 to 2 cups water
- Hot pepper molasses - optional
- Paprika
- Peeled, salted eggplant, fried or oven-roasted
- Dried mint for garnish

Method
Follow the cooking sequence without leaving the page.
- Soak the chickpeas overnight. The next day wash them, peel them and halve each chickpea.
- In a pot over the heat, sauté the chopped onion and minced garlic in a little olive oil and vegetable oil until golden.
- Add the soaked, drained chickpeas (or canned chickpeas after draining) over the onions and garlic, stir, then cover and cook over low heat until the chickpeas are tender.
- Peel and finely chop the tomatoes, then add them to the pot after the chickpeas are cooked and stir. Add salt, tomato paste, spicy pepper paste, water (as needed) and paprika, stir and let the mixture boil to thicken the sauce.
- At this point, fry the peeled eggplant (or roast it) in a little oil.
- Add the eggplant to the pot, then let everything simmer for an additional 5 minutes before removing the maghmour from the heat.Timers: 5 min
- Sprinkle a pinch of dried mint on top, pour the maghmour and serve after it reaches room temperature or chilled from the refrigerator.
