Ingredients

  • 1 cup water
  • 1 cup sugar
  • A pinch of lemon juice
  • 1 1/2 cups coarse semolina
  • 1/4 cup butter
  • 1 1/4 cups crushed pistachios
  • 1 teaspoon rose water
  • 1 teaspoon orange blossom water
  • 1 liter milk
  • 1/4 cup white vinegar
  • 1 can cream or qamer
  • Nuts for decoration

Method

  1. Dissolve the sugar in water and place on the heat until it boils; then add a squeeze of lemon, the semolina and the butter. When the mixture thickens, add the pistachios, stir well, add rose and orange blossom water, and remove from the heat.
  2. Meanwhile, prepare the clotted cream: heat the milk just until warm, add the vinegar, which will cause the milk to curdle into curds.
  3. Strain the curds well; when cooled, add to them the clotted cream and the rose and orange blossom water.
  4. Shape the Madlouqa mixture into molds or small cups, spread the chilled clotted cream on top, then garnish with nuts.
  5. Serve the syrup alongside the Madlouqa in cups.
