- 1 cup water
- 1 cup sugar
- A pinch of lemon juice
- 1 1/2 cups coarse semolina
- 1/4 cup butter
- 1 1/4 cups crushed pistachios
- 1 teaspoon rose water
- 1 teaspoon orange blossom water
- 1 liter milk
- 1/4 cup white vinegar
- 1 can cream or qamer
- Nuts for decoration
Method
- Dissolve the sugar in water and place on the heat until it boils; then add a squeeze of lemon, the semolina and the butter. When the mixture thickens, add the pistachios, stir well, add rose and orange blossom water, and remove from the heat.
- Meanwhile, prepare the clotted cream: heat the milk just until warm, add the vinegar, which will cause the milk to curdle into curds.
- Strain the curds well; when cooled, add to them the clotted cream and the rose and orange blossom water.
- Shape the Madlouqa mixture into molds or small cups, spread the chilled clotted cream on top, then garnish with nuts.
- Serve the syrup alongside the Madlouqa in cups.
