Ingredients

  • 2 kg plain yogurt
  • Salt to taste
  • 2 liters olive oil

Method

  1. Add the salt to the yogurt; you can adjust the amount of salt to taste.
  2. Pour the yogurt into a cloth bag and tie it tightly.
  3. Place the labneh cloth bag in a sieve, put a weight on top, and place it in the refrigerator (not the freezer) for one day.
  4. Turn the labneh bag, change its orientation, and place the weight on it for a second day.
  5. Divide the resulting mixture into several small balls and arrange them on a clean cloth; leave them like this for one full day or until completely dry.
  6. Coat the labneh balls in sesame seeds, nigella seeds (black seed), or dried za'atar on all sides, then place them in an airtight jar.
  7. Repeat the previous step until all the mixture is used, then cover the balls with olive oil, seal the jar, and store it at room temperature.
