Zucchini with Tahini and Lemon

Ingredients

  • 1 kilogram zucchini
  • 2 cups ground meat
  • 3 tablespoons tahini
  • 1 fine chopped onion
  • 4 garlic cloves, minced
  • Juice of 2 lemons
  • 1/2 bunch fresh cilantro (or frozen)
  • 1 teaspoon dried coriander
  • Water
  • Salt and black pepper
  • 1 teaspoon pomegranate molasses
  • A pinch of ground cinnamon
  • A pinch of garlic powder
  • 1 tablespoon vegetable oil
  • Note
  • You can adjust tahini quantity and lemon juice to taste for a tangier sauce and depending on how thick you want the sauce.

Method

Follow the cooking sequence without leaving the page.

  1. Wash the zucchini well and carefully remove the core so as not to break the pieces. Wash them inside and place the zucchini in a colander.
  2. Meanwhile prepare the meat filling. Heat vegetable oil in a wide pan, add finely chopped onion and fry until browned, then add the ground meat.
  3. Stir the onion and meat well and add salt and assorted spices to taste. When the meat is cooked, add pomegranate molasses and turn off the heat.
  4. Stuff the zucchini with the meat filling. Return the stuffed zucchini to the pan and sauté them gently and carefully for a few minutes in the same way as Kousa Ablama.
  5. Transfer the fried zucchini to an appropriate pot and add a little water—enough to simmer them for 10 minutes.

  6. Whisk the tahini with crushed garlic, lemon juice, and cilantro...
  7. Set the zucchini that are half-cooked aside, whisk the tahini mixture with the zucchini cooking liquid, then gently and carefully return the zucchini to the pot to cook with the sauce.
  8. Leave the zucchini with tahini over low heat for an additional 20 minutes to ensure the zucchini are fully cooked...
