Ingredients

  • A few purslane leaves
  • 2 cucumbers
  • 1 bunch parsley
  • 1 green bell pepper
  • 5 lettuce leaves
  • 3 radishes
  • Half a bunch of fresh mint leaves
  • 2 white cabbage leaves
  • 1 red cabbage leaf
  • 5 tomatoes
  • One-third cup olive oil
  • Half a cup lemon juice
  • 1 tablespoon pomegranate molasses
  • 1 teaspoon salt, or to taste
  • A pinch of sumac, or 1 teaspoon
  • Half a loaf of Arabic bread

Method

Follow the cooking sequence without leaving the page.

  1. Wash the vegetables well, then let them drain thoroughly in a colander. It is best to chop the vegetables while they are dry.
  2. Chop all the vegetables, or cut them into medium or small pieces as desired. You can also leave the purslane, mint, and parsley leaves whole without chopping them.
  3. Add the oil, salt, lemon juice, pomegranate molasses, and sumac over the vegetables and mix well.
  4. Toast the Arabic bread or fry it until golden, then break it into pieces and scatter it over the fattoush. Serve immediately before the bread softens.
