Chicken fajitas are a very handy Mexican dish that became widely popular. An easy, quick recipe — the instructions include a link to make guacamole.

  • Chicken breast, sliced into strips
  • 8 onions, sliced
  • 3 sweet bell peppers, sliced (mixed colors)
  • 3 hot red peppers
  • Pinch garlic powder
  • 2 cloves garlic, crushed or minced
  • Oil as needed
  • Lemon juice
  • 3 tablespoons oregano or dried thyme
  • 1 teaspoon sugar
  • 1 cup corn
  • Salt to taste
  • Black pepper to taste
  • Fajita seasoning
  • Mozzarella cheese

Method

Follow the cooking sequence without leaving the page.

  1. In a bowl, combine the sliced onions, garlic, sliced bell peppers, sugar and lemon juice. Add salt, hot pepper, black pepper and oregano, then mix.
  2. Add the sliced chicken to the bowl and mix all ingredients until well combined.
  3. Cover the bowl and refrigerate the chicken fajita mixture for about two hours so the chicken absorbs the flavors.
  4. Heat a deep frying pan over the stove and cook the fajita mixture, stirring, until the chicken changes color.
  5. Sprinkle grated mozzarella cheese on top and keep cooking until the chicken is fully cooked.
  6. Serve the fajitas in French bread rolls or fajita wraps with shredded lettuce and guacamole sauce.
