Ingredients
- Shish barak dough:
- 2 cups flour
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 teaspoon butter
- 3 tablespoons vegetable oil
- slightly less than 1/2 teaspoon yeast
- Filling:
- 250-300 g minced meat
- 1 onion, very finely chopped
- 1 tablespoon butter
- a pinch of seven spice
- a pinch of sweet spice
- a pinch of salt
- a pinch of hot pepper, optional
- Yogurt sauce:
- 1 kilogram yogurt
- 1 1/2 tablespoons cornstarch
- 1 egg
- salt
- about 500-600 ml water, which is equivalent to 2 or 2 1/2 cups of water
Method
- Start by preparing the dough: mix the ingredients and add the water gradually until you get a smooth, soft dough.
- Let it rest for at least 20 minutes, then begin working with it.Timers: 20 min
- Meanwhile, prepare the filling. Cook the meat until its moisture evaporates, then add the chopped onion and butter and cook until the filling is done.
- Add the spices and salt at the end, stir, then turn off the heat.
- Let the filling cool. Meanwhile, place the yogurt in a pot and stir it quickly, or whisk it with a hand whisk while still cold to eliminate any lumps.
- Add the water, cornstarch, salt, and egg to the yogurt and whisk well until combined.
- Place the yogurt pot over the heat and stir continuously until it comes to a boil.
- Lower the heat and let it simmer gently for 10 minutes.Timers: 10 min
- Fill the shish barak either now or earlier: roll out the dough thinly, cut it into small circles using a cup or cutter, fill the circles with the filling, and fold them into small caps.
- Place the shish barak pieces into the yogurt pot after it has simmered for 10 minutes, then increase the heat again and let everything boil until the dough is cooked through.Timers: 10 min
- Sauté the crushed garlic in butter with the pine nuts and chopped coriander, then pour this topping over the shish barak pot.
- After two boils, turn off the heat.
- Serve shish barak with fluffy rice.
