Ingredients

  • 1 kilo veal pieces or shanks
  • 1 large dry onion
  • 1/2 cup fresh chopped cilantro
  • 1 clove garlic, crushed
  • 2 large tomatoes
  • 1 teaspoon tagine spice mix
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon seven-spice mix or mixed spices
  • 1/2 teaspoon black pepper
  • 1 chicken bouillon cube
  • 2 cups water
  • 1 zucchini, chopped
  • 1 carrot, chopped
  • 1 small potato, chopped
  • 1 turnip, chopped
  • 1/2 kilo squash, chopped
  • 1 fresh bell pepper, chopped
  • 1/2 cup cooked chickpeas
  • Salt to taste

Method

  1. Sauté the finely chopped onion in a little oil until softened. Add the pieces of meat and stir until the raw color disappears.
  2. Add the cilantro, garlic, and chopped tomatoes, sprinkle the spices and salt, and stir. After a while, add the bouillon cube and 2 cups of water and mix. Finally, add the mixed vegetables as desired and the cooked chickpeas and stir.
  3. Let the tagine simmer on low heat until the meat and vegetables are tender.
