How to Make Meat Mandi
Meat mandi is one of the most famous dishes in Gulf cuisine. You can prepare chicken mandi instead, using either meat or chicken, and serve it with dakkous sauce and tomatoes or whipped yogurt.
Ingredients

- Bone-in meat pieces
- 4 cups basmati rice
- 7 cups water from the meat cooking broth
- Spices: black pepper, meat seasoning, 5 cardamom pods, 5 cloves, 2 cinnamon sticks
Method
Follow the cooking sequence without leaving the page.
- Place the meat in a deep pot or preferably in a pressure cooker with a pinch of sugar to tenderize the meat, and add cardamom, spices, a dry onion, bay leaves and aromatics as desired.
- Put the pressure cooker on low heat; you can prepare this step the night before and finish the rest at lunch time.
- Remove the meat from the pot and drain it from the broth. Put all the spices with a tablespoon of oil in an ovenproof pot, sauté briefly, then add the pre-soaked rice and cover them with the meat broth.
- Wrap the pot with two layers of aluminum foil and prick both layers of foil with a fork.
- Brush the meat with a little saffron after dissolving the color with a little water and olive oil, place it on the foil and cover it tightly with foil on top.
- Place the meat in a hot oven at high temperature.
- Leave it for an hour or until the meat is confirmed cooked... smoke the rice and meat with charcoal to give the mandi flavor and aroma.
- Remove the spices from the surface of the rice and serve hot
