Easy Chocolate Cake

Nothing beats a ready-made cake in the fridge after a long day. Any time of day is perfect for a slice with chocolate sauce. Here is the easy chocolate cake you’ll love, and your kids will too!

Ingredients

  • Easy Chocolate Cake — Ingredients: 4 eggs
  • 1 cup sugar
  • 200 g softened butter
  • 2 tablespoons apricot jam
  • 1 cup milk
  • 2 1/2 cups flour
  • 2 tablespoons cocoa powder
  • Juice of half a sour lemon.
  • Juice of 1 orange.
  • Lemon zest
  • Orange zest
  • 1 teaspoon vanilla extract
  • 2 1/2 teaspoons baking powder
  • Aleppo pistachios for garnish
  • To make the chocolate sauce
  • 1/2 chocolate bar
  • a small tub of crème fraîche (for desserts)
  • Break the chocolate bar into pieces and melt it in a double boiler — i.e., place the bowl of chocolate over a pot of boiling water. Add one can of crème fraîche to the melted chocolate and whisk them with an electric mixer. Put the sauce in the refrigerator for at least one hour until cool.

  1. Beat the eggs with the vanilla extract using an electric mixer, then add the lemon and orange zest. Add the sugar and continue beating for about ten minutes, until the mixture has doubled in volume and the sugar is fully dissolved.
  2. Add the milk, the butter, and the juice.
  3. Sift the flour together with the baking powder and cocoa powder. Add the dry ingredients in batches and gently mix with a tablespoon.
  4. Grease the cake pan with a light layer of butter and dust it with flour. Pour the cake batter into the pan.
  5. Transfer the pan to a preheated oven set to medium and place it on the oven rack. Bake the chocolate cake for about 40 minutes, until it has risen, is cooked through, and the top is dry.

  6. Let the chocolate cake cool, then spread chocolate sauce over the top and sprinkle with coarsely ground pistachios for decoration.
  7. To prepare the chocolate sauce: Break the chocolate bar into pieces and melt it in a bain-marie, that is, place the bowl of chocolate over a pan of boiling water. Add one can of crème fraîche to the melted chocolate and whisk them together with an electric hand mixer. Put the sauce in the refrigerator for at least one hour until it cools.
