How to Make Genoise Cake

Genoise is one of the finest sponge cakes from famous Italian cuisine. Try this method for preparing Genoise cake, and you can use any filling you like.

Ingredients

  • 4 eggs, at room temperature
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 70 g cornstarch — if you want a chocolate-flavored cake, split the amount between cornstarch and cocoa
  • 4 tablespoons oil
  • 4 tablespoons cold water
  • Note: Because measurements in this recipe are precise, it is recommended to use a standard 150 g cup

Method

  1. Whip the eggs for 5 minutes, then place the bowl over a bain-marie on low heat, taking care not to boil the water.
