How to Make Kunafa Crumbs

Ingredients

- 6 cups fine semolina
- 1 cup sugar
- 1/2 cup orange blossom water
- 1/2 cup rose water
- A pinch of mahleb
- 2 cups unsalted butter or ghee
- 4 tablespoons powdered milk
- 1 cup water, or as needed
Method

- Mix the semolina with the sugar, mahleb and the milk... melt the butter over low heat and rub the semolina with it...
- Boil one cup of water and add to it the rose water and orange blossom water and add them to the semolina and mix gently...
- You should achieve a consistency similar to thick cream...
- Preheat the oven to high heat and spread the mixture in a non-stick tray and place it in the middle rack of the oven..
- Do not brown the crumbs; they should only absorb all the liquids well and become one piece for 12 minutes or less...Timers: 12 min
- Remove the tray and leave it until completely cool then grind it well in an electric mixer until it becomes like granules of sand then sieve it and thus the crumbs are ready...
- This quantity is enough for two medium-sized kunafa trays... you can use what you need and store the remaining amount in the refrigerator in an airtight container
