How to Make Jallab Drink

Jallab is the number-one Ramadan drink, especially in Syria, Jordan, Palestine, and Lebanon. We’re used to buying it ready-made and diluting it with water, but making it at home is something else :)

Ingredients

Start here, then move straight into the method.

  • Soak the raisins, pine nuts, berries, and mixed nuts together in cold water for half an hour.
  • In a glass pitcher, add the date syrup, grape molasses, and concentrated rose syrup, then stir.
  • Stir, then add the dried cranberries, cashews, raisins, and pine nuts (or to taste). Drain them from the water they were soaked in, then spoon them over the pitcher or put them in a glass so each person can add as they like. Jallab can also be enjoyed plain without nuts, if preferred.

Method

Follow the cooking sequence without leaving the page.

  1. Soak the raisins, pine nuts, cranberries, and all the nuts in cold water for half an hour.
  2. In a glass pitcher, combine the date molasses, grape molasses, and concentrated rose syrup, and stir.
  3. Burn the tip of the cinnamon stick until it starts to smoke, then place the stick in the pitcher and seal the opening tightly to ensure a smoky flavor.
  4. When serving, or after 15 minutes, remove the cinnamon stick from the pitcher and discard it, then add the desired amount of crushed ice and water to taste as well (usually, the amount of water is 3 times the amount of the jallab mixture if there is no ice; with the addition of ice, the water should be reduced because the ice will turn into water).

  5. Stir and add the dried cranberries, cashews, raisins, and pine nuts, or as desired. Drain them from the water they were soaked in, then add them to the pitcher or place them in a glass and let everyone add as they like. Jallab can also be served plain, without nuts, if desired.
  6. Serve the jallab immediately while cold.
