Chocolate Swiss Roll ... one of the nicest light, refined Western desserts
Ingredients
- 7 eggs
- 210 g sugar
- 1 tablespoon vanilla extract
- 190 g flour
- 20 g cocoa powder
- 1 teaspoon baking powder
- simple syrup (or sugar syrup) for brushing the swiss roll
- Chocolate cream:
- 4 packets instant whipped-cream powder
- 200 g melted chocolate
- 6 hazelnut chocolate pieces
- 1/4 cup chopped hazelnuts – optional
- Chocolate sauce:
- 220 g chocolate
- 200 g liquid/heavy cream
- 90 g honey
- 50 g butter
- For decoration — optional:
- Fruit

- How to make the chocolate cream:
- Whip the cream according to the package instructions, then add the melted (cooled) chocolate and the chopped hazelnuts if using, and mix until combined.
- Use the chocolate cream to fill the swiss roll.

Method
- Beat the eggs in a mixer with the vanilla and add the sugar gradually.
- Whip the mixture for about 10 minutes until it becomes a thick foam.Timers: 10 min
- Sift the flour, cocoa, and baking powder and add them over the egg mixture... Fold them in gently from the bottom up so the chocolate swiss roll batter does not deflate.
- ...Pour the mixture into a medium rectangular baking tray lined with parchment paper...
- Place the tray in a preheated oven at 190°C for about 15 minutes.Timers: 15 min
- When removing the cake from the oven, place a large sheet of parchment on the table and flip it onto it to remove the parchment from the bottom.
- Roll the cake using the parchment paper and leave it to cool well.
- When the cake has cooled, carefully unroll or flatten it, brush it with syrup, fill it with chocolate cream, and roll it again into a log.
- After finishing, place the chocolate swiss roll in the refrigerator (not the freezer) until it sets, then decorate it with chocolate sauce and serve.
- You can also decorate the swiss roll with fresh fruit and chocolate pieces as desired.
- Whip the cream according to the instructions on the packaging, then add the melted and cooled chocolate over the cream and the crushed hazelnuts if using, and stir well until combined.
- Use the chocolate cream to fill the chocolate swiss roll.
- Prepare a double boiler to melt the chocolate: put a large pot with hot water, then place a smaller pot inside it. Put the cream and chocolate chips in the smaller pot and stir until the chocolate is completely melted, then add the honey and butter and mix.
