Ingredients
Start here, then move straight into the method.
- 2½ cups coarse semolina
- 1 cup melted ghee or butter
- ½ cup sugar
- Pinch of salt
- 1 cup yogurt
- 2 tablespoons rose water
- 2 tablespoons orange blossom water
- 1 teaspoon yeast
- Syrup (sugar syrup)
- 2 cups sugar
- 1 cup water
- 1 tablespoon lemon juice
- Orange blossom water and rose water
Method
Follow the cooking sequence without leaving the page.
- First dissolve the yeast in two tablespoons of liquid milk, then put it in a bowl. Add the melted ghee, semolina, yogurt, sugar, rose water, and orange blossom water and mix to obtain a batter-like mixture rather than a dough; if it feels too thick, add a little more yogurt or milk....
- Grease the baking pan with a little tahini or butter, though tahini gives a distinctive flavor...
- Pour the mixture into the pan, cut it into pieces, and decorate the namoura to taste (as in the accompanying photos)
- Bake the namoura at 180°C for between 30 and 40 minutes, depending on the oven...Timers: 40 min
- After the namoura is baked, pour the syrup over the top immediately—the amount of syrup according to taste...
- Syrup (sugar syrup):
- 2 cups sugar
- 1 cup water
- 1 tablespoon lemon juice
- Orange blossom water and rose water
- Combine the sugar and water and stir; when the syrup boils, after three minutes of boiling squeeze in two drops of lemon and add a tablespoon of orange blossom water or rose water or both
- Note: you can use butter instead of ghee in this recipe, but it is preferable to use dessert ghee because it has a special flavor
