Molokhia, also known as moloukhiya, is one of the most delicious and elegant main dishes! Every cook has her own special touch when preparing this luxurious dish, but we recommend adding a roasted onion to the molokhia to give it a very distinctive flavor.

  • Dried molokhia, quantity as desired
  • 1 whole chicken, bone-in
  • Chicken boiling seasonings
  • 2 tablespoons vegetable oil
  • 1 head garlic, about 7 cloves
  • 1 bunch fresh cilantro
  • Hot red pepper
  • Juice of 1 lemon

Method

  1. After cleaning the molokhia, soak it for half an hour in hot water, then wash it well several times until the water running off the molokhia becomes clear white...
  2. Spread the washed molokhia on a large tray to dry. Meanwhile wash the chicken well and rub it with salt, vinegar, lemon, and a spoonful of flour...
  3. Boil the chicken with all the aromatics—bay leaves, cloves, cardamom pods, and nutmeg—and set it aside...
  4. Prepare a pot, add two tablespoons of oil and a quantity of very finely chopped garlic, coriander, chopped hot pepper, and salt, and sauté them over the heat...
  5. Then add the washed molokhia gradually, continuing to stir for about a quarter of an hour; after that add enough water to cover the mixture along with the juice of a lemon, and let them boil—about a quarter of an hour before turning off the heat, add the boiled chicken...
  6. Note: you can char an onion over the flame and add it to the molokhia to give it a great flavor...
  7. Serve the green molokhia with white rice and a mixture of chopped onion with vinegar
