Kamouna, or kibbeh spice mix, southern-style—this recipe is very clear and easy. Make a batch and store it for when you need it. Excellent with kibbeh nayyeh (raw kibbeh) and with tomato kamouna as well.
Ingredients
- 1 cup fine dry bulgur
- 1 medium onion
- 1/4 bunch fresh mint
- Marjoram (fresh or dried), a pinch
- 1 tablespoon ready-made kamouna spice mix
- 1 teaspoon sweet paprika, finely ground
- Hot peppers (green or red), a few to taste
- Salt to taste

Method
- Put all the ingredients in a blender or food processor and pulse until smooth and the bulgur is broken down.
- Store in an airtight jar in the refrigerator for use as needed.
