Ingredients

  • 1 kg chickpeas soaked in water overnight
  • 500 g dried fava beans soaked in water for two days, changing soaking water several times
  • 1 celery stalk
  • a bunch parsley
  • a bunch cilantro
  • 1 head garlic about 6 cloves
  • 2 potatoes
  • 2 onions
  • 1 tablespoon salt
  • 1 teaspoon ground coriander
  • 1 tablespoon falafel spice
  • 1 teaspoon baking powder
  • sesame

Method

  1. Blend all the vegetables with the chickpeas and fava beans until smooth, then add the spices and salt.
  2. When it's time to shape and fry the falafel, add baking powder and sesame seeds.
  3. Let the mixture rest for about half an hour before shaping it into patties.
  4. Fry the falafel patties in plenty of vegetable oil.
  5. If you plan to freeze some of the falafel for later use, it is preferable not to add baking powder and sesame to the mixture.
  6. This quantity is large; you can prepare half the amount to get fewer falafel patties if desired.
  7. Serve the fried falafel as patties or in sandwiches with various fresh vegetables, turnip, pickles, and tartar sauce.
