Pepper sauce, homemade and simply the best.. For anyone who doesn't know this sauce, it's very important to learn it because it really changes the taste of cooking, and it's also super delicious with all kinds of grilled meats.
Ingredients
- 10 kilos red sweet peppers
- 2 dry onions
- 1 head garlic
- 3 tomatoes
- 2 tablespoons coarse salt
- Paprika or pepper powder (sweet or hot, as desired)
Method
- After washing the red sweet peppers and draining them, remove the seeds and cut the peppers
- Place them in a pot over low heat with the chopped or sliced onion, garlic cloves, and peeled, chopped tomatoes
- Add the coarse salt to the vegetables and mix, then leave them over low heat until they come to a boil, without adding water at all
- When they have boiled well and we see that the peppers are cooked through, add the paprika and mix, then remove from the heat
- Blend with an electric mixer to obtain a smooth sauce
- Divide the pepper sauce into clean, dry, sterilized glass jars
- Cover the top with olive oil and seal the jars immediately while the sauce is still hot
- After one full day, once the jars have cooled completely, store them in a cool, dry place. After opening any jar, keep it in the fridge
