Ingredients

  • Chicken breasts, sliced thinly across the grain
  • Juice of one lemon
  • 4 tablespoons white or red vinegar
  • 1 teaspoon dried oregano
  • 1 tablespoon parsley, dried or fresh
  • 1 tablespoon rosemary
  • 1/2 teaspoon ground cumin
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon pepper
  • 4 cloves garlic, crushed or finely chopped
  • 4 tablespoons olive oil

Method

  1. Place the chicken slices in a wide bowl and sprinkle the aromatic herbs over all the pieces.
  2. Add the lemon juice, vinegar, oil, and salt, toss well, and leave them to marinate for several hours or overnight in the refrigerator.
  3. Preheat the grill, or place them on a large baking tray in the oven or on the barbecue grill, and grill each side for several minutes, then flip to the other side.
  4. Serve the herb-grilled chicken breasts with any type of salad, vegetables, or rice.
