Ingredients

  • 4 boneless chicken breasts
  • 4 tomatoes, sliced
  • 12 fresh basil leaves
  • 1 tablespoon oregano or wild thyme
  • 4 cloves garlic, crushed
  • A pinch of salt
  • A pinch of white pepper
  • A mixture of vegetable oil and butter
  • 1 can of canned tomatoes

Method

  1. Sprinkle salt and spices over the chicken breasts, then use a knife to cut 4 or 5 diagonal slits across each breast.
  2. Insert a slice of tomato into each slit, along with crushed garlic and fresh basil leaves. Brush the chicken breasts with oil and sprinkle dried oregano over them, then arrange the pieces in an ovenproof glass dish containing the chopped tomatoes mixed with salt and oregano. Bake the chicken breasts in a 350°F oven until cooked through, making sure to baste the breasts with the sauce while baking.
  3. Remove the cooked breasts from the oven and serve them hot with boiled rice or vegetables.
