Lentil Soup with Swiss Chard and Lemon

- 3 bunches Swiss chard (or 1/2 kg)
- 1 cup large lentils
- 1 large onion, finely chopped
- 2 chicken bouillon cubes
- 1 medium potato, peeled and diced
- Juice of 2 lemons
Method

- Wash the chard well, drain, and rough chop.
- Sauté the onion in a little oil until it wilts, then add boiling water.
- Add the chard, cleaned lentils, potato cubes, and chicken bouillon cubes.
- Let the soup boil for about an hour on low heat until ingredients are tender. Add the lemon juice, stir, then remove from heat and serve.
