Lentil Soup with Swiss Chard and Lemon

  • 3 bunches Swiss chard (or 1/2 kg)
  • 1 cup large lentils
  • 1 large onion, finely chopped
  • 2 chicken bouillon cubes
  • 1 medium potato, peeled and diced
  • Juice of 2 lemons

Method

  1. Wash the chard well, drain, and rough chop.
  2. Sauté the onion in a little oil until it wilts, then add boiling water.
  3. Add the chard, cleaned lentils, potato cubes, and chicken bouillon cubes.
  4. Let the soup boil for about an hour on low heat until ingredients are tender. Add the lemon juice, stir, then remove from heat and serve.
