Easy Lentil Soup

Lentil soup made at home, no easier way

Ingredients

Start here, then move straight into the method.

  • 1 cup yellow split lentils
  • 1 onion, sliced into wedges
  • olive oil
  • 1 carrot
  • 1 potato
  • 1 clove garlic
  • a few parsley leaves
  • 1 celery stalk - optional
  • 5 cups water, or as needed
  • salt
  • a pinch of turmeric
  • 1 teaspoon ground cumin
  • lemon juice, for serving

Method

Follow the cooking sequence without leaving the page.

  1. Sauté the onion wedges in olive oil until softened
  2. Add the chopped carrot, diced potato, garlic clove, parsley, and celery, one after the other, stirring as you go
  3. After a little while (do not wait for them to cook through), add the rinsed and drained lentils and the water
  4. When the water comes to a boil, reduce the heat and let the pot simmer gently until all the ingredients are tender
  5. Using a blender, blend the ingredients and return the soup to the pot
  6. Add the salt, turmeric, and cumin, and let it boil for just 5 more minutes
  7. Serve immediately with a squeeze of lemon juice, or to taste
