Corn and Oat Soup with Chicken
A comforting corn and oat soup with chicken — easy and flavorful. The key step is boiling the chicken; after that the soup comes together quickly. Delicious any time of year.

Ingredients

- 1 chicken breast piece
- 1 large onion (dry)
- 2 garlic cloves, crushed
- 2 cups frozen corn
- 6 tbsp rolled oats
- Black pepper
- Salt

Method
Follow the cooking sequence without leaving the page.
- Wash and boil the chicken well, seasoning the water with lemon and salt. You can use boneless chicken or chicken on the bone.
- Add aromatics while boiling the chicken — cinnamon sticks, cardamom pods, cloves, bay leaves, and nutmeg.
- When the chicken is cooked, strain it from the stock and reserve the stock for the soup.
- In a deep pot over the stove, heat a little vegetable oil and sauté the finely chopped onion.
- Add the crushed garlic and cook the onion and garlic until soft.
- Add the corn (rinsed) and sauté for several minutes with the onion and garlic.
- Add the shredded chicken (cut into small pieces) and stir with the other ingredients.
- Pour the reserved chicken stock over the mixture, then add the oats.
- Season with salt and black pepper to taste.
- Simmer the corn-and-oat soup for about 10 minutes, or until the oats are cooked and the soup thickens.Timers: 10 min
