Oven-Grilled Fish
Oven-grilled fish — a great dish to serve when you have guests. Here is an easy stuffing based on cilantro, garlic, lemon and hot pepper.
Oven-grilled fish — the fish should be large to prepare it this way. We recommend grilling the fish instead of frying it.
Ingredients
Start here, then move straight into the method.
- Large fish, about 2 kg
- 8 garlic cloves, crushed
- 1/4 cup vegetable oil
- 1/4 cup vinegar
- A bunch of cilantro, washed and chopped
- 2 lemons, cut into crescent slices
- 1 cinnamon stick
- 3 bay leaves
- 2 tablespoons fish seasoning
- 1/2 teaspoon crushed hot pepper
- 5 tablespoons salt for washing the fish

Method
Follow the cooking sequence without leaving the page.
- Wash the fish well and rub it with salt, then wash it again and make 3 slashes on each side of the fish... this helps it cook faster
- Let it drain in a colander for about an hour to remove all the water
- In a small bowl, combine the spices, pepper, coriander, a little salt, oil, and garlic and stir, then place this mixture inside the fish and into the slashes we made... distribute a cinnamon stick and bay leaves
- Spread aluminum foil in the bottom of the baking tray, then brush the foil with oil and put the fish in the tray
- Brush the top with a little oil as well and sprinkle salt on both sides
- Put the tray into a hot oven at medium heat... leave it on the middle rack for about an hour or until cooked... it's not recommended to leave it longer than necessary so it doesn't dry out and lose its desired tenderness
- Serve the oven-grilled fish alongside tartar sauce or tahini sauce, and baba ghanoush or other appetizers
