Mixed bean salad — simple and very nutritious

Ingredients

  • 1 cup cooked long beans (yardlong/green beans)
  • 1 cup cooked small beans (e.g., navy or small white beans)
  • 1 cup cooked chickpeas
  • 1 green bell pepper, diced small
  • 1 red bell pepper, diced small
  • 1/2 teaspoon salt, or to taste
  • Juice of 2 lemons
  • 2 tablespoons chopped parsley
  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • Cherry tomatoes for garnish

Method

  1. Combine all the ingredients — the beans and the vegetables — in a large bowl.
  2. Squeeze the lemons over the mixture, add the remaining dressing ingredients (olive oil, salt, and garlic), and mix well.
  3. Garnish the mixed bean salad with cherry tomatoes or as desired, and serve chilled alongside meat or chicken dishes.
