Mixed bean salad — simple and very nutritious
Ingredients
- 1 cup cooked long beans (yardlong/green beans)
- 1 cup cooked small beans (e.g., navy or small white beans)
- 1 cup cooked chickpeas
- 1 green bell pepper, diced small
- 1 red bell pepper, diced small
- 1/2 teaspoon salt, or to taste
- Juice of 2 lemons
- 2 tablespoons chopped parsley
- 1/4 cup olive oil
- 1 clove garlic, crushed
- Cherry tomatoes for garnish

Method
- Combine all the ingredients — the beans and the vegetables — in a large bowl.
- Squeeze the lemons over the mixture, add the remaining dressing ingredients (olive oil, salt, and garlic), and mix well.
