Chinese Noodle Salad with Shrimp
Salads come in many forms and are among the tastiest and most varied dishes. Today’s recipe comes from East Asia’s Chinese kitchen and uses noodles with shrimp and vegetables, though you can modify or add any ingredient as you like.

- Noodles, Chinese, cooked (250 g)
- 5 carrots
- 3 tablespoons fresh mushrooms, sliced
- 1 cup corn
- 3/4 cup fresh cilantro (coriander)
- 1 bunch green onions
- Shrimp, small size
- Sauce:
- 1/4 cup vegetable oil
- 4 tablespoons sour or citrus juice (acid)
- 4 tablespoons soy sauce
- Salt (when using soy sauce, salt should be very light since the soy is salty)

Method
- Cook the noodles according to the package directions.
- Fry the cleaned shrimp in a little vegetable oil until the water evaporates; drain in a sieve.
