Ingredients
- Half a cup quinoa, soaked for 15 minutes
- 1 cup water
- Corn
- Iceberg lettuce, romaine lettuce, or any other type, coarsely chopped
- Arugula
- Tomatoes
- Cucumber
- Radish
- Sweet red pepper
- Beetroot - optional
- Green onion leaves
- Carrot
- Dressing:
- Salt
- Lemon juice
- Pomegranate molasses
- Olive oil
- Mustard
- A pinch of black pepper
- Walnuts for garnish - optional
Method
- Soak the quinoa for 15 minutes, then rinse and drain itTimers: 15 min
- Place it in a pot with 1 cup of water, cover, and cook until it absorbs all the water
- Let it cool completely before adding it to the vegetables and assembling the salad
- In a serving bowl, arrange the lettuce, arugula, corn, tomatoes, cucumber, radish, and green onions ... you can add more vegetables as desired or leave some out
- Grate the carrot on top
- Whisk the dressing ingredients and drizzle over the top ... then garnish
