Ingredients

- 1 bunch arugula or rocket
- Slices of smoked salmon
- Red onion
- 1/4 boiled beetroot
- 1 sweet red pepper
- Juice of 1/2 lemon
- 1 tablespoon olive oil
- Salt
- A pinch of coarse black pepper
- Crushed hot pepper, to taste
- Note
- Use only a small pinch of salt because smoked salmon is salty

Method
Follow the cooking sequence without leaving the page.
- Wash the arugula thoroughly and drain it, then tear large leaves into large pieces if needed
- Peel the cooked (or canned) beet and chop it finely
- Cut the onion and red pepper into wedges, i.e., thin slices
- In a deep bowl, put the oil, lemon juice, and salt and mix, then add the onion, pepper, and beet and toss
- Finally add the arugula and toss, then arrange the smoked salmon slices on top and sprinkle with coarse black pepper and crushed red pepper
- Serve the salad immediately so the arugula doesn't wilt
