- Potatoes
- Garlic
- Green or red hot pepper - 1 pod (as desired and depending on the amount of potatoes)
- Lemon juice
- Olive oil
- Salt
- Fresh green mint
- Basil
- Green onion

Method
- Boil the potatoes in salted water, then peel them and let them cool completely
- When cooled, cut them into small cubes so they don’t fall apart if they are hot
- In a deep bowl, mash the garlic with salt and chili pepper, then add the lemon juice and olive oil
- Mix the dressing and add the cold potato cubes, then stir
- Set the salad aside for a few minutes so the potatoes absorb the dressing
- Add fresh mint, basil, and chopped green onions and gently toss the salad
- Serve the potato salad with olive oil drizzled on top; it is eaten with bread and onions or as desired
