Beef roll with Aleppo pistachios, served with Russian salad and mashed potatoes, and of course, gravy sauce too :) A wonderful complete recipe... We recommend trying it and serving it to guests

Ingredients

  • 1 kilogram ground beef (preferably lean)
  • 1 cup whole Aleppo pistachios
  • 2 large carrots
  • 1 egg
  • 3 cloves garlic
  • Salt to taste
  • 1 teaspoon seven-spice blend
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 1 cup breadcrumbs or ground crackers
  • Mashed potatoes:
  • 5 large potatoes
  • A piece of butter, about 1 tablespoon
  • 1/2 cup liquid milk
  • Salt
  • A pinch of sweet spice
  • Russian salad:
  • 1 can peas
  • 1 can corn
  • 2 carrots
  • 2 tablespoons mayonnaise
  • Gravy or sauce:
  • 2 beef stock cubes
  • 2 tablespoons butter
  • 1/2 cup flour
  • 1 teaspoon cinnamon
  • 1 teaspoon seven-spice blend
  • Light salt (or none because of the beef stock cubes)
  • 2 cups water

Method

  1. First... prepare two sheets of baking paper, or parchment paper...
  2. Grate the carrots and finely chop the garlic, then roughly chop only 1/2 cup of the Aleppo pistachios.
  3. Add the carrots, garlic, breadcrumbs, and chopped pistachios to the meat, along with the egg, spices, and salt, and mix well.
  4. Divide the meat into two portions and place half on one sheet of prepared baking paper...
  5. To make spreading the meat easier, you can wear gloves and wet your hands with a little oil. Spread the first portion of meat evenly on the baking paper. You can also place another sheet of baking paper over the meat and use a rolling pin on top to spread it evenly.
  6. Sprinkle some Aleppo pistachios over the meat and press the nuts into the minced meat, then start rolling the meat into a roll, pressing slightly as you roll to get an evenly thick roll.
  7. Wrap the roll well in aluminum foil.
  8. Prepare the second portion of meat the same way... and so you will have 2 beef rolls with Aleppo pistachios.
  9. Bake in a hot oven at 200°C for 1 hour
    Timers: 60 min
  10. Meanwhile, start preparing the mashed potatoes... Boil the peeled potatoes and let them cook well, then drain.
  11. Add the butter to the hot potatoes, along with the salt, spice, and milk, and mash well.
  12. Prepare the salad... Wash the cooked or canned corn and peas, then drain them.
  13. Cut the carrots into small cubes and boil them as well.
  14. Add the spice, mayonnaise, and salt to the vegetables once they have cooled, and stir gently.
  15. To prepare the gravy... melt the butter in a saucepan over the heat with the bouillon cubes, then add the flour and spices and stir well in a circular motion so they combine and the flour doesn't clump.
  16. Add the water and stir continuously until the mixture thickens, then remove from the heat.
  17. When the meat is cooked in the oven... turn off the oven and leave the rolls for 10 minutes to rest before removing them from the oven.

  18. Cut into slices of the desired thickness and serve with the mashed potatoes, salad, and gravy.
