Veal Fillet Roast
A standout roast veal fillet recipe that enriches the table. It's also healthy because it’s lean (no added fat). Some like to serve the roast as a sandwich.
Veal fillet roast — a very tasty recipe for a family dinner or guests.
Ingredients
Start here, then move straight into the method.
- 1 kg veal fillet
- 1 teaspoon sweet paprika (or sweet red pepper powder)
- salt to taste
- 6 garlic cloves
- 1 tablespoon butter
- Vegetables for boiling: 1 zucchini, carrot, potato and 1 dry onion
- Aromatics: bay leaf, nutmeg and cloves
- Vegetables for roasting: green beans, carrots, peas, corn, broccoli and others as desired
- Sauce
- 1 tablespoon flour
- 1 cup of the veal cooking liquid

Method
Follow the cooking sequence without leaving the page.
- Stud the meat with garlic cloves by inserting them with a knife.
- Sprinkle salt and paprika over it, then place it in a pot on the stove and brown it.
- Add butter until it melts, then add the vegetables and aromatics and cover the fillet with hot water.
- Leave the veal fillet roast over medium heat until it's only half cooked.
- Remove the fillet from the water and place it in a roasting pan with the vegetables of your choice for roasting; set the boiled vegetables aside to use when making the sauce.
- Turn the oven to top heat only (broil) and occasionally baste the roast with its own broth.
- When the meat begins to take on a golden color, brush it with a little butter and remove the pan from the oven.
- Begin preparing the sauce: in a pan, melt butter and add flour, stirring.
- Add the roast poaching broth and salt and stir.
- Puree the boiled vegetables that were set aside and add them as well.
- Let the sauce simmer briefly.
- Serve the veal fillet roast with the sauce and potato purée or boiled pasta lightly tossed in butter.
